This is a quick lunch for at home office or picnic. Wide open for variations.

Ingredients
  • 1-1/2 cups chopped cucumbers
  • 1-1/2 cups chopped tomatoes
  • 1/2 cup Thousand Island Dressing
  • 6 whole grain pita breads, cut in half
  • 6 slices your favorite cheese
  • 9 or 10 ounces of you favorite deli meat or leftover meats.

Directions
  1. Mix cucumbers, tomatoes and dressing.
  2. Spoon 2 tablespoons cucumber mixture into each pita half.
  3. Fill with remaining ingredients.
  4. Serve with coleslaw, pickles and bagel chips!
