Yam Bread With Pecans Recipe
YAM BREAD WITH PECANS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Martinez Estate in Mansfield, Texas in 1994.

Ingredients
  • 1-1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 cup white sugar
  • 2 eggs beaten
  • 1/2 cup vegetable oil
  • 2 tablespoons milk
  • 1 cup cooked and mashed yams
  • 1 cup chopped pecans
  • 1/2 cup golden raisins

Directions
  1. Preheat oven to 325 then generally grease a loaf pan.
  2. In medium bowl stir together flour, baking powder, salt, nutmeg cinnamon and sugar.
  3. Add eggs, oil and milk then mix until well blended.
  4. Stir in mashed yams, pecans and golden raisins then pour batter into pan and bake 70 minutes.
  5. Allow bread to cool in pan at least 15 minutes before removing.
