- 3 to 4 potatoes, cut into frying size shopping list
- 1 green tomato, cut into fourths, then cut each fourth into halves shopping list
- 1 cup okra, sliced shopping list
- 1 cup squash, sliced shopping list
- 1 medium onion, coarsely chopped shopping list
- About 1 cup cornmeal shopping list
- 2 tsp. salt shopping list
- 1 tsp. black pepper shopping list
- 1/4 cup vegetable oil shopping list
How to make it
- Combine all ingredients into a bowl.
- Top with enough corn meal to coat.
- Heat vegetable oil in a cast iron skillet. Add vegetables.
- Fry over medium-low heat until vegetables are tender and lightly browned. Turning occasionally. Do not stir to often (this will make the vegetables mushy).
- Drain any excess oil off.
