Herbes De Provence Chicken Recipe
This is a very tasty dish ideal for that quick summer Sunday lunch we like it served with a nice bottle of a chilled blush wine. Serves: 6 or even 8, depends on the size of your chicken Time: 3 to 4 hours depending on how chilled out you are

Ingredients
  • 2 pounds, boneless chicken breasts, trimmed of any fat
  • ¼ cup, flour
  • ½ teaspoon, paprika
  • 3 tablespoons, olive oil
  • 3 cloves of garlic, minced
  • 2 cups, wine (I would use the wine being served)
  • 1 tablespoon, Herbes de Provence
  • Fresh rosemary, basil, parsley (optional)
  • Black pepper and salt to taste

Directions
  1. Mix the flour and the paprika, roll the chicken breasts in the flour mixture.
  2. Heat the olive oil in a large pot, and add the chicken browning it in small enough batches so that the meat browns nicely.
  3. Remove the meat, and sauté the garlic, remember not too much or it will catch and become bitter
  4. Add the wine and scrape the brown bits from the bottom of the pot, stir, and cook on a high heat until a sauce forms.
  5. Turn down the heat to a low simmer, put the chicken back in the pan., sprinkle with the Herbes de Provence, salt, pepper and minced fresh herbs if desired and bake at 300f for 2 1/2 hours, or until the chicken is quite tender. Serve with a rice or potato dish.
