I usually roast in my oven in a bundt cake pan(yep, you read right) but decided to give my grill a go instead and it turned out just as good with less butter splatters. I use any left overs for chicken & noodles or chicken & wild rice soup.

Ingredients
  • 1 whole chicken
  • 5 to 6 Tbsp. butter, melted
  • 3 Tbsp. olive oil
  • 2 Tbsp. lemon pepper seasoning
  • salt & pepper

Directions
  1. Prepare your grill for indirect heat. (I have a 3 burner so I leave the middle one off, and the other two on low-medium heat, just want a nice slow cooked bird)
  2. Wash and dry the chicken completely and place in a pan to carry out to your grill.
  3. Brush butter mixture on the back side of the chicken, and a little more into the cavity, place it on the grill, breast side up.
  4. Brush the breast side with the butter mixture.
  5. Close the lid and cook for 2 to 2 1/2 hours or until a meat thermometer reads 170 degrees.
  6. (Mine was done after 1 hour & 45 minutes. Just check it after 1.5 hours of cooking)

Are you doing it in the bundt pan on the grill? It would stand up better than those things I bought or a beer can. Nope I just reread and see not... Hummmm wonder if it would work... got a couple extra pans laying around.

We had plans of using the bundt pan, but decided to put it right on the grill. Maybe next time I'll use the pan.
