Callaloo Salad

This is a salad from the Carribean with a plant native to the islands. It can be substituted with Spinach. If you can find Callaloo at an Island Market it is worth the price.
Ingredients
- 1 lb. callaloo or spinach shopping list
- 6 boiled, sliced potatoes shopping list
- 6 thin slices of cheese shopping list
- 1/2 cup mayonnaise shopping list
- squeeze of lime juice shopping list
How to make it
- Plunge callaloo into boiling water for 3 minutes. Drain and chop.
- Mix with cold sliced potatoes and thin slices of cheese.
- Dress with mayonnaise to which is added a squeeze of lime juice.
