Ingredients

CAKE

3 cups flour

2 cups sugar

1 tsp soda

1 tsp salt

1 tsp cinnamon

3 eggs

1 ½ cups oil

1 ½ tsp vanilla

1 8 oz. can crushed pineapple

2 cups chopped bananas

2 cups chopped pecans

CREAM CHEESE FROSTING

1 8 oz. pkg. cream cheese, softened

1 stick butter, softened

1 tsp vanilla

2 cups powdered sugar

1 cup chopped pecans

Directions

CAKE

Combine dry ingredients in a large bowl.

Add eggs and oil.

Beat until well blended.

Add vanilla, pineapple, bananas, and pecans.

Pour into 9 X 13 pan.

Bake at 350º oven for 25 minutes to 30 minutes.

Cool.

Frost with cream cheese frosting.

FROSTING

Beat cream cheese and butter until well blended.

Add vanilla and beat.

Add the sugar a little at a time until all is well blended.

Beat in pecans.

Frost cake when cool

Shouldn't the bananas be mashed in the cake? Wouldn't there just be dark chunks and make the cake spoil quicker? I am wondering not disparging the recipe.
