French Onion Quiche

- 2 large sweet onions (app. 1 1/2 pounds) shopping list
- 5 tablespoons butter shopping list
- 1 tablespoon flour shopping list
- 3 eggs, slightly beaten shopping list
- 1 cup light cream or half-and-half shopping list
- 1/2 teaspoon salt shopping list
- freshly ground pepper to taste shopping list
- dash of nutmeg shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1 9 inch pie shell, partially baked shopping list
How to make it
- Chop onions into 1/2 inch size pieces.
- Saute in butter until lightly golden, about 8 minutes, stirring occasionally. Cool slightly.
- Stir in flour, eggs, and cream, mixing well.
- Season with salt, pepper, and nutmeg.
- Pour into shell.
- Sprinkle top with parmesan cheese.
- Bake in preheated 350 degree oven 30-35 minutes or until just set.
