Southern California Guacamole Recipe
You will need some good tortilla chips, but it also goes well on top of quesadillas, enchiladas, etc.

Ingredients
  • 2 Ripe Avocados
  • 1 TBSP chopped red onion
  • 1 TBSP chopped cilantro
  • 1 Lime (not lemon) juiced
  • 2 cloves of garlic smashed
  • 1 Jalapeno Pepper, small dice (remove seeds and white veins for less heat)
  • 1/2 ripe tomato, diced
  • 1/2 Tsp ground oregano
  • Salt and Pepper to taste

Directions
  1. In a Molcajete Tejolote (Mortar and Pestle), rub with the lime prior to juicing, smash the garlic, cilantro, pepper, red onion and tomato. Smash the avocado, and season with the lime juice, oregano, salt and pepper.
  2. The beauty of this is the chunks of flavor within. You could blend it all in a food processor, but you would loose the flavor chunks.
  3. Serve with tortilla chips.
