Grilled fish with spicy coriander tomato sauce

- 4 fresh fish, whole, gutted and cleaned, about 400-500g each shopping list
- Big handful coriander, finely chopped shopping list
- 15 cloves garlic, peeled and finely sliced shopping list
- 3 ripe red tomatoes, chopped shopping list
- Teaspoon coarse black pepper shopping list
- salt to taste shopping list
- juice from 1-2 lemons shopping list
- Cup olive oil shopping list
How to make it
- Rinse the fish and place in grill. Recipe time assumes 20 minutes each side, flipped once.
- Meanwhile, heat the olive oil. Add the garlic before it gets smoky hot or the pieces will frizzle and "die".
- When the garlic is lightly browned, add the black pepper, tomatoes and coriander. When the sauce boils again, lower the heat and let it simmer until the fish are done.
- When the fish are done, add the lemon juice. The sauce may spit - watch out! Stir, cook few seconds and remove from flame. The sauce should be thick and rich. Serve the fish in a bed of sauce.
- Tip: If you like spicy hot, add a chopped hot green pepper to the sauce at the stage of browning the garlic. Great with a green salad on the side.
