Grilled Fish With Spicy Coriander Tomato Sauce Recipe

Ingredients
  • 4 fresh fish, whole, gutted and cleaned, about 400-500g each
  • Big handful coriander, finely chopped
  • 15 cloves garlic, peeled and finely sliced
  • 3 ripe red tomatoes, chopped
  • Teaspoon coarse black pepper
  • Salt to taste
  • Juice from 1-2 lemons
  • Cup olive oil

Directions
  1. Rinse the fish and place in grill. Recipe time assumes 20 minutes each side, flipped once.
  2. Meanwhile, heat the olive oil. Add the garlic before it gets smoky hot or the pieces will frizzle and "die".
  3. When the garlic is lightly browned, add the black pepper, tomatoes and coriander. When the sauce boils again, lower the heat and let it simmer until the fish are done.
  4. When the fish are done, add the lemon juice. The sauce may spit - watch out! Stir, cook few seconds and remove from flame. The sauce should be thick and rich. Serve the fish in a bed of sauce.
  5. Tip: If you like spicy hot, add a chopped hot green pepper to the sauce at the stage of browning the garlic. Great with a green salad on the side.
