Gorgonzola and Walnut Stuffed Chicken Breasts

- 4 chicken breasts shopping list
- 3 medium garlic cloves, chopped shopping list
- 1 cup walnuts, chopped shopping list
- 1 - 1 1/2 cup gorgonzola cheese (I like more, you may like less) shopping list
- salt shopping list
- pepper shopping list
- extra virgin olive oil shopping list
How to make it
- Toast walnuts for a few minutes, add to garlic and cheese. Slice fattest part of chicken breast in half and stuff cheese and walnut mixture into the breast.
- Season with salt and pepper and and place in a VERY hot pan, prepped with the olive oil.
- When chicken is golden brown on both sides and cooked through, top each breast with what's left of the stuffing mix and bake for a few minutes until the cheese melts.
- I usually serve with a cold pasta salad alongside a veggie.
