Roasted Shallots

- 6 tbls. butter shopping list
- 2 lbs. shallots, peeled, with roots intact shopping list
- 3 tbls. sugar shopping list
- 3 tbls. red wine vinegar shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 2 tbls. parsley, finely chopped shopping list
How to make it
- Preheat the oven to 400
- Add shallots to boiling water and boil for a minute
- Remove skins
- Melt butter in skillet
- Add shallots and sugar and stir to coat
- Cook over medium heat 10 minutes or so, stirring occasionally, until shallots start to brown
- Add vinegar, salt and pepper and toss to coat
- Put pan in the oven and roast 20-30 minutes
- Sprinkle with parsley right before serving

Never met a shallot recipe that I didn't love. Wonderful little buggers. Can't stand peeling them but then you gave the perfect hint on how to do it. Good stuff, GF!
