How to make it

  • Preheat the oven to 400
  • Add shallots to boiling water and boil for a minute
  • Remove skins
  • Melt butter in skillet
  • Add shallots and sugar and stir to coat
  • Cook over medium heat 10 minutes or so, stirring occasionally, until shallots start to brown
  • Add vinegar, salt and pepper and toss to coat
  • Put pan in the oven and roast 20-30 minutes
  • Sprinkle with parsley right before serving

    Never met a shallot recipe that I didn't love. Wonderful little buggers. Can't stand peeling them but then you gave the perfect hint on how to do it. Good stuff, GF!
