I just couldn't eat 1 more ham steak or ham omelet or ham sandwich, so I came up with this recipe to use leftover...you guessed it...HAM. My honey just loves them( me, too!).

Ingredients
  • 1 lb Ham, grated or ground
  • 1 lb raw ground pork
  • 1/4 c corn meal
  • 1/4 c sour cream
  • 1 Tbsp dehydrated minced onion or equiv.
  • 2 Tbsp Dijon
  • 2 Tbsp honey
  • 1/4 c cracker crumbs
  • 2 eggs, beaten
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp parsley flakes

Directions
  1. Mix all ingredients well
  2. Shape by 1/2 cupfuls into 1/2 inch thick patties
  3. Fry in butter or oil til golden on both sides
  4. Make a nice sauce from equal parts:
  5. sour cream, dijon and honey.
