How to make it

  • Saute onion in butter/EVOO for 5 minutes.
  • Add hash browns and fry til golden
  • Break up beef and add to spuds along with salt and pepper and garlic
  • Cook 5 minutes and add beets
  • Heat thru and serve with a dollop of sour cream
  • Serve leftovers next day for breakie with poached eggs
