Best Ever Carrot Cake Recipe
This cake is so good, I've served it warm and un-iced as a veggie for the main course. At first there were raised eyebrows, even a whisper about my sanity, but when they tasted it, all bets were off.

Ingredients
  • 1 c Canola or Corn Oil
  • 1 1/4 c Honey
  • 4 Eggs
  • 2 c Flour, all-purpose or cake and pastry, either is fine
  • 2 tsp each, Baking Powder and Soda
  • 1 tsp Salt
  • 1 Tbsp Cinnamon
  • 3 c grated Carrots
  • 1 c chopped Pecans and/or Raisins (optional, I never use)
  • Cream Cheese Icing (optional)

Directions
  1. In a large mixing bowl, blend Oil and Honey
  2. Add Eggs, one at a time, beating well after each
  3. Whisk dry ingreds and add to above, stirring just til blended
  4. Fold in Carrots and optionals, if using
  5. Divide batter between 2 greased and floured, 8 x 8 glass dishes
  6. Bake at 325 F for 30 -35 minutes or til cake tests clean and is just starting to pull away from sides of dish.
  7. Serve warm as a veggie or cool and ice with Cream Cheese Frosting
