Turkey Cottage Pie Recipe
A neat take on Shepherd's Pie, this is a savory, belly-satisfying casserole to feed the whole family.

Ingredients
  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour
  • 1 envelope onion soup mix
  • 2 cups water
  • 2 cups cut-up cooked turkey or chicken
  • 10 ounces frozen mixed vegetables, thawed
  • 1 cup shredded Swiss cheese
  • 1/8 teaspoon black pepper
  • 5 cups hot mashed potatoes
  • 1/2 cup sliced mushrooms
  • paprika

Directions
  1. Preheat oven to 375
  2. In a large saucepan, melt butter and add flour; cook, stirring constantly 5 minutes or until golden brown
  3. Blend onion soup mix thoroughly with water
  4. Sitr into flour mixture
  5. Bring to a boil, then simmer 15 minutes or until thickened
  6. Stir in turkey, vegetables, mushrooms, cheese, and pepper.
  7. Spoon into lightly greased 2-quart casserole; top with mashed potatoes, then sprinkle with paprika
  8. Bake 30 minutes or until bubbly
