How to make it

  • Put "kadai" (Indian style deep frying pan) on stove at medium flame
  • When the kadai heats up, pour ghee
  • When some fumes start appearing add mustard seed
  • When the mustard seeds starts crackling, add "urad dal"
  • When urad dal starts becoming a little darker, add chopped onion & chilies
  • About after 15 second, add curry leaves
  • When onions become transparent, add rice
  • Fry well so that rice does not stick to bottom, add salt
  • keep frying the mix till all ingredients are well mixed
  • Serve hot with veg salad and potato chips (optional)

    Love how you determine when to add the next ingredient by how the prior one smells, acts, tastes or looks! Poetic. =) And more intuitive than the familiar "after 2 min and 18 seconds" type instructions. I love all food Indian and will be trying this soon! I'm only missing the urad dal or I'd march out the kitchen and make it right now. =P
