Simple Indian Fried Rice

- 1 large bowl - cooked boiled rice (leftover from previous cooking) shopping list
- 1 large onion chopped shopping list
- 2 green chilies chopped in button shape shopping list
- 1 tsp mustard seed shopping list
- 1 tsp Urad Dal (split black gram without skin) shopping list
- 1 tbsp curry leaves shopping list
- 2 tbsp "ghee" (Indian style heated butter) or refined oil shopping list
- salt to taste shopping list
How to make it
- Put "kadai" (Indian style deep frying pan) on stove at medium flame
- When the kadai heats up, pour ghee
- When some fumes start appearing add mustard seed
- When the mustard seeds starts crackling, add "urad dal"
- When urad dal starts becoming a little darker, add chopped onion & chilies
- About after 15 second, add curry leaves
- When onions become transparent, add rice
- Fry well so that rice does not stick to bottom, add salt
- keep frying the mix till all ingredients are well mixed
- Serve hot with veg salad and potato chips (optional)
