Ingredients
  • 4 boneless pork chops,3/4" thick
  • 3 limes
  • 1/2 c canned coconut milk
  • salt and ground cayenne pepper
  • 4 scallions,minced for garnish
  • 1/2 c minced cilantro for garnish(optional)

Directions
  1. Marinate pork in the juice of 1 lime and prepare a med-hot fire on grill. Grill chops over heat,about 4 to 5 mins a side.
  2. Meanwhile,warm coconut milk in saucepan over low heat,do not boil;season with salt and a pinch of cayenne.. Add juice of second lime to sauce and cook 5 mins. Tranfer chops to platter when done.
  3. Spoon sauce over chops. Garnish with scallions and cilantro and sprinkle with juice from third lime. Serve with rice and remaining sauce.
