This is a satifying and simple chicken parm recipe that is sure to please all ages. Serve with green salad and whole wheat pasta. You can top the chicken w/ additional cheese if you please.

Ingredients
  • 8 medium chicken breasts or cut chicken pieces, about 1/2 inch thick
  • 2 eggs, beaten
  • 8 ounces shaved/grated Parmesan cheese (can use Romano blend)
  • 1 cup panko bread crumbs (optional)
  • 2-4 T oil
  • 16 ounces red pasta sauce (jarred is fine)
  • Salt, pepper, seasoning salt to taste

Directions
  1. Pat chicken dry and season w/ spices
  2. Place beaten eggs in shallow dish
  3. Place 1/3 of Parm and crumbs if using in a separate dish (add the rest as it is used up)
  4. Add oil to pan and heat over medium-high heat
  5. Dip the chicken in the egg, shake off excess and then dip in parm
  6. Fry chicken about 5 minutes each side in the oil
  7. Adjust heat if necessary
  8. Remove chicken from pan, may have to fry in batches
  9. Add red sauce to pan
  10. Place chicken back in pan and cook over medium-high heat for about 5 minutes
  11. Serve over whole pasta and enjoy!
