How to make it

  • Pat chicken dry and season w/ spices
  • Place beaten eggs in shallow dish
  • Place 1/3 of Parm and crumbs if using in a separate dish (add the rest as it is used up)
  • Add oil to pan and heat over medium-high heat
  • Dip the chicken in the egg, shake off excess and then dip in parm
  • Fry chicken about 5 minutes each side in the oil
  • Adjust heat if necessary
  • Remove chicken from pan, may have to fry in batches
  • Add red sauce to pan
  • Place chicken back in pan and cook over medium-high heat for about 5 minutes
  • Serve over whole pasta and enjoy!
