CHICKEN AND DRESSING CASSEROLE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Corrigan Estate in Justin, Texas in 1992.

Ingredients
  • 1/2 stick butter
  • 2 medium white onions sliced
  • 14 ounce package stuffing mix
  • 2 well beaten eggs
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 2-1/2 cups diced cooked chicken

Directions
  1. Sauté onions in butter until soft.
  2. Toss stuffing with eggs, cream of chicken soup and chicken broth then spread in baking dish.
  3. Spread onions over stuffing then put chicken on top of onions.
  4. Mix cream of mushroom soup with milk and spread over chicken.
  5. Cover with foil and bake at 350 for 45 minutes.
