Chicken Curry

- 1 Can - coconut milk shopping list
- 1/3 Can - water (simply use the coconut milk can to measure) shopping list
- 4 or 5 - Anise Flower/star anise shopping list
- 1 Large cinnamon stick shopping list
- 1 or 2 inch piece of ginger - cute into big chunk shopping list
- 4 pips - garlic - Mince it up shopping list
- 1/2 (medium sized) - white onion -Mince it up shopping list
- 1 Stalk - lemongrass shopping list
- 1/4 TSP - salt shopping list
- 1/2 TSP - fish sauce (If not, substitute with Light soy sauce) shopping list
- 4 pieces (I tend to use 2 drumstick and 2 thighs) - chicken shopping list
- 2 Large potatoes - cut into big chunks shopping list
- 2TBSP - Meat curry powder (adding slightly more towards the end if you think necessary) shopping list
How to make it
- Lightly saute in oil - garlic, onion & curry powder
- Then add in the rest of the ingredients EXCEPT the potatoes
- Leave to simmer on low heat for about 25 mins
- Add in the potatoes.
- Simmer on low heat another 15 or 20 mins.
- Serve with rice or bread (for dipping)

Easy peacy but I like the twist with the fish sauce....will give it a bash next time (but will reduce the salt then).....*****high 5
