- Base: shopping list
- 1 stick unsalted butter shopping list
- 1/3c granulated sugar shopping list
- 1/3c unsweetened cocoa powder shopping list
- 1 large egg,beaten shopping list
- 1 sleeve saltines (40 crackers,reg. or whole wheat) finely crushed shopping list
- 3/4c finely chopped roasted peanuts shopping list
- Filling and Glaze: shopping list
- 3/4c grape jelly shopping list
- 7Tbs. plus 1 tsp unsalted butter,softened shopping list
- 1/3c creamy peanut butter shopping list
- 1/2c confectioners sugar shopping list
- 4 oz semi-sweet chocolate,chopped shopping list
How to make it
- Make the base: Line an 8' square baking pan with foil'extending over sides. Put butter in med heatproof bowl;position the bowl over a saucepan of barely simmering water(bowl should not touch water). Once butter melts,stir in sugar and cocoa. Whisk in the egg;cook whisking until mixture is warm and consistency of hot fudge,6 mins.
- Remove from heat;mix in saltine crumbs and peanuts. Press crust into pan. Set aside the saucepan of water
- Make the Filling: Spread jelly over crust in pan;place in freezer for a few mins. Beat 5 Tbs plus 1 tsp butter,the peanut butter and confectioners' sugar with mixer till light. Spread over jelly layer;return to freezer while you make glaze.
- Place the chocolate and remaining 2Tbs butter in heatproof bowl;set over pan of simmering water and stir till chocolate is melted. Remove from heat;stir till smooth. When cool but still runny,spread the glaze over the chilled peanut butter layer. Freeze another 30 mins.
- Bring bars to eroom temperature. Use foil flaps to remove from pan;cut into squares.
