Vegan Cheese Cake Recipe
This is a great vegan cheese cake that even non-vegans will love!

Ingredients
  • 12oz silken tofu
  • ½ cup soy milk
  • ½ cup raw sugar
  • 1 tsp vanilla extract
  • ¼ cup maple syrup
  • 1 9″ graham cracker crust

Directions
  1. Preheat 350°F. Wrap tofu in a paper towel and gently squeeze excess moisture out. This will help keep the final product from being runny.
  2. In a blender, combine the tofu, soy milk, sugar, vanilla extract and maple syrup. Blend until smooth and pour into pie crust.
  3. Pour blended mixture into pie crust and smooth the top with a spatula.
  4. Bake for 40-45 minutes.
  5. Remove from oven and place on counter, away from heat to allow cooling to room temperature.
  6. Chill overnight or for at least 10 hours
  7. Serve with cherries, blueberries, peaches, or plain.
