Turkey Jubilee Salad

- 1 c roast turkey, cubed shopping list
- 1 stalk celery, minced shopping list
- 1 cup fresh cherries, pitted and quartered shopping list
- 4 dates, chopped shopping list
- 1/4 cup toasted sliced almonds shopping list

- I always make the sauce separate so to control the amount that goes in the salad. Some like more, some like less. shopping list

- 1/2 cup plain fat-free yogurt shopping list
- 2 tbsp reduced calorie mayonaise shopping list
- 1 tsp country dijion mustard shopping list
- 1 tbsp sweet pickle relish shopping list
- 1 tbsp dried tarragon shopping list
- salt and pepper to taste shopping list
How to make it
- Toss the turkey, celery, cherries, dates and almonds in a medium bowl until well mixed.
- In a separate bowl prepare the sauce by mixing well the yogurt, mayo, mustard, relish, tarragon, salt and pepper.
- Add the sauce a tablespoon at a time until covered to your liking.
- Refridgerate for at least 30 minutes. Server on wheat toast or spring greens as you like.
