WILD BLACKBERRY PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hogan Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 egg
  • 1 cup buttermilk
  • 1 tablespoons oil
  • 1 tablespoons honey
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup wild blackberries

Directions
  1. Mix together egg, buttermilk, oil and honey.
  2. In separate bowl combine dry ingredients with blackberries.
  3. Add together and mix just until it forms a batter.
  4. Drop 1/3 cup batter onto 400 degree griddle and flip as soon as bubbles form.
