Unusually Good Lentil And Rice Cookies Dated 1971 Recipe
UNUSUALLY GOOD LENTIL AND RICE COOKIES DATED 1971 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sims Estate in Arlington, Texas in 1991.

Ingredients
  • 1/2 cup margarine
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup white or whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 cup rolled oats
  • 1/2 cup cooked drained lentils
  • 1/2 cup cooked wild rice
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds

Directions
  1. Cream margarine, sugars, egg and vanilla together until fluffy then stir in flour and soda.
  2. Blend well then stir in rolled oats, lentils, rice, raisins and sunflower seeds.
  3. Drop from teaspoonfuls onto greased baking sheets allowing space for spreading.
  4. Press flat with floured fork then bake at 375 for 10 minutes and carefully lift off pan.
  5. Cool completely before serving.
