How to make it

  • First prepare the mince. In a frying pan brown the onion, grated on a grater.
  • Immediately after put mince and brown it too.
  • When it drinks it juice, add the tomato sauce, salt, pepper and let it simmer for 20 minutes.
  • Meanwhile, prepare the aubergines and the potatoes.
  • Slice them and fry in the olive oil.
  • Before frying the aubergines, make them less bitter.
  • Salt them and wait for 5-10 minutes.
  • Then wash them well and fry them.
  • Then lay in a roasting pan potatoes, aubergines, mince and then again potatoes and aubergines.
  • When the mousakas is layed out in the roasting pan, it's time for beshamel.
  • Melt the butter in a casserole.
  • Stir well with a wooden spoon and put flour little by little, trying not to make it lumpy.
  • Add some milk, stirring all the time.
  • Once the first dose of ingredients is mixed with butter, start adding flour and milk again.
  • This procedure should be done in low heat and by constant stirring. When you use up all the flour and all the milk, remove the casserole from the heat and add salt and egg.
  • Continue stirring and the beshamel is ready.
  • Cover the mousakas with beshamel and roast in the oven for 50 minutes at 180 Centigrade.
  • Let it cool off for 30 minutes and then eat it.
