Curry i made up for tea tonight. Im not a fan of the jars and packets of pre-made curry sauce, so i like to make up my own. Its fun, try it sometime.

Ingredients
  • 500g beef, fat removed and cut into cubes
  • 1 brown onion, finely chopped
  • 2 tsp fresh grated ginger
  • 1 Tbsp coriander seeds, crushed
  • 3 cloves garlic, crushed
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp cardamom seeds
  • 5 fresh curry leaves
  • 3 small potatoes, (or one big one) cubed
  • Pumpkin, cubed (about same amount as potatoes)
  • handful green beans, chopped
  • 400g can lentils, drained and rinsed

Directions
  1. in a large bowl, combine the beef with the onion, ginger, garlic and other spices. Leave for a bit to kinda marinate.
  2. Cook beef in a heavy saucepan until brown. 10-15 minutes.
  3. Add potatoes and a little water if necessary. Cook for 5 minutes
  4. Add pumpkin and beans, cook another 5 minutes.
  5. Add the lentils just before serving, unless you like them all mushyyy.
  6. Top with yoghurt and chutney and serve on rice or with naan bread.
