How to make it

  • Combine shrimp, ginger, garlic, 3 scallions, hot pepper flakes and peppercorns.
  • Heat oil in a wok until surface of the oil shimmers and a few small wisps of smoke appear.
  • Add shrimp and seasonings then stir fry over maximum heat for 2 minutes.
  • Add sugar and soy sauce then continue stir frying 2 more minutes.
  • Pour in enough water to cover shrimp and reduce heat to low.
  • Cook covered for 2 hours then serve by placing a portion of pasta in bottom of soup bowl.
  • Ladle shrimp on top and sprinkle with the sliced scallions.
