Spicy Shrimp Over Fettuccini Recipe
SPICY SHRIMP OVER FETTUCCINI This recipe came from an estate sale. I obtained it when I purchased the family collection from the McLean Estate in Irving, Texas in 1982.

Ingredients
  • 1- 1/2 pounds medium shrimp shelled and deveined
  • 3” piece fresh ginger root peeled and finely chopped
  • 8 cloves garlic peeled and flattened with side of cleaver or knife but not chopped
  • 3 spring onions white and green parts cut into 2” lengths
  • 1/2 cup peanut oil
  • 1 teaspoon hot red pepper flakes
  • 1 teaspoon peppercorns
  • 1 teaspoon granulated sugar
  • 3 tablespoons soy sauce
  • 1/2 pound fettuccini noodles cooked according to package directions
  • 2 spring onions white and green parts cut into very thin slices

Directions
  1. Combine shrimp, ginger, garlic, 3 scallions, hot pepper flakes and peppercorns.
  2. Heat oil in a wok until surface of the oil shimmers and a few small wisps of smoke appear.
  3. Add shrimp and seasonings then stir fry over maximum heat for 2 minutes.
  4. Add sugar and soy sauce then continue stir frying 2 more minutes.
  5. Pour in enough water to cover shrimp and reduce heat to low.
  6. Cook covered for 2 hours then serve by placing a portion of pasta in bottom of soup bowl.
  7. Ladle shrimp on top and sprinkle with the sliced scallions.
