Whiskey Drowned Salmon Recipe
WHISKEY DROWNED SALMON This recipe came from an estate sale. I obtained it when I purchased the family collection from the McLean Estate in Irving, Texas in 1982.

Ingredients
  • 2 slices white onion
  • 1 carrot sliced
  • 1/2 cup white wine
  • 2 salmon steaks
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon whiskey
  • Several sprigs of watercress

Directions
  1. Place onion, carrot, wine and 2 cups water in medium saucepan and bring to a boil.
  2. Boil 5 minutes to make court bouillon then rinse salmon and place in court bouillon.
  3. Liquid should completely cover salmon if not add water.
  4. Bring to a simmer and gently cook 5 minutes then remove to individual plates.
  5. Whisk mayonnaise, lemon juice and whiskey together in a small bowl and spoon over salmon.
  6. Place several sprigs of watercress on the side and serve immediately.
