How to make it

  • shave shallots and garlic
  • put to a pot with a bit of oil to sweat
  • once translucent add a cup of wine
  • reduce to au sec
  • add broth and veggies
  • let simmer till fish is done
  • get saute pan with oil shimmering hot
  • season fish
  • and get a nice hard sear on the flesh side
  • turn over and finish in the oven
  • ladel broth into bowel
  • set fish in center
  • tear off a chunk of bread and enjoy
