Take Along Picnic Marinated Beef

- 2 pounds deli roast beef, thinly sliced (I like it rare) shopping list
- 1 red onion, thinly sliced shopping list
- 1 green bell pepper, thinly sliced into rings shopping list
- 1 cup tomato juice (I use a spicy V8 juice) shopping list
- 1 tablespoon beef bouillon granules shopping list
- 1 tablespoon prepared yellow mustard shopping list
- juice of 1 lemon shopping list
- 6 crusty rolls shopping list
- lettuce and tomato slices (optional) shopping list
How to make it
- Combine beef, onion and green pepper. Toss gently to combine.
- In small saucepan, combine tomato juice, bouillon granules, mustard and lemon juice.
- Bring to a boil.
- Pour over beef.
- Cover and chill overnight.
- Serve on rolls with lettuce and tomato if desired.
