Take Along Picnic Marinated Beef Recipe
This is perfect for packing for a picnic. No need to worry about a grill or transporting raw meat.

Ingredients
  • 2 pounds deli roast beef, thinly sliced (I like it rare)
  • 1 red onion, thinly sliced
  • 1 green bell pepper, thinly sliced into rings
  • 1 cup tomato juice (I use a spicy V8 juice)
  • 1 tablespoon beef bouillon granules
  • 1 tablespoon prepared yellow mustard
  • juice of 1 lemon
  • 6 crusty rolls
  • Lettuce and tomato slices (optional)

Directions
  1. Combine beef, onion and green pepper. Toss gently to combine.
  2. In small saucepan, combine tomato juice, bouillon granules, mustard and lemon juice.
  3. Bring to a boil.
  4. Pour over beef.
  5. Cover and chill overnight.
  6. Serve on rolls with lettuce and tomato if desired.
