White Cheddar Scalloped Potatoes

- 6 tablespoons unsalted butter shopping list
- 1/2 cup all purpose flour shopping list
- 4 cups chicken broth shopping list
- 3 cups coarsely grated white cheddar cheese shopping list
- 4 pounds boiling potatoes shopping list
- 1 cup sourdough bread crumbs shopping list
How to make it
- Preheat oven to 350 and butter 2 quart shallow baking dish.
- In heavy saucepan melt butter over moderately low heat and whisk in flour.
- Cook roux whisking 3 minutes then add broth in a stream whisking.
- Bring sauce to a boil whisking then simmering then whisking until thickened.
- Remove pan from heat and whisk in cheese, salt and pepper then whisk until cheese is melted.
- Peel potatoes and slice 1/8” thick.
- In prepared dish make 5 layers of potatoes and sauce beginning with potatoes ending with sauce.
- Sprinkle with bread crumbs and bake uncovered for 1 hour.
