How to make it

  • Preheat oven to 350 and butter 2 quart shallow baking dish.
  • In heavy saucepan melt butter over moderately low heat and whisk in flour.
  • Cook roux whisking 3 minutes then add broth in a stream whisking.
  • Bring sauce to a boil whisking then simmering then whisking until thickened.
  • Remove pan from heat and whisk in cheese, salt and pepper then whisk until cheese is melted.
  • Peel potatoes and slice 1/8” thick.
  • In prepared dish make 5 layers of potatoes and sauce beginning with potatoes ending with sauce.
  • Sprinkle with bread crumbs and bake uncovered for 1 hour.
