Tropical Chicken Kebabs Dated 1964 Recipe
TROPICAL CHICKEN KEBABS DATED 1964 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Merkel Estate in Dallas, Texas in 1998.

Ingredients
  • 1/3 cup lime juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 6 chicken breast halves skinned boned and cut into 1-1/2” pieces
  • 12 pearl onions peeled
  • 1 large green pepper seeded and cut into 2” pieces
  • 1 papaya peeled seeded and cut into 2” pieces
  • 1-1 /2 cups fresh pineapple chunks

Directions
  1. Combine lime juice, vegetable oil and honey in shallow dish.
  2. Add chicken and toss gently then cover and marinate in refrigerator 8 hours stirring occasionally.
  3. Remove chicken from marinade and reserve marinade.
  4. Alternatively thread chicken, onion, pepper, papaya and pineapple on 6 skewers.
  5. Coat grill rack with nonstick spray then place rack on grill over medium hot coals.
  6. Place kebabs on rack and cook 20 minutes turning and basting frequently with marinade.
