How to make it

  • Combine lime juice, vegetable oil and honey in shallow dish.
  • Add chicken and toss gently then cover and marinate in refrigerator 8 hours stirring occasionally.
  • Remove chicken from marinade and reserve marinade.
  • Alternatively thread chicken, onion, pepper, papaya and pineapple on 6 skewers.
  • Coat grill rack with nonstick spray then place rack on grill over medium hot coals.
  • Place kebabs on rack and cook 20 minutes turning and basting frequently with marinade.
