Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 12-ounce beer ; (1 1/2 cups)
  • 3 -4 large onions ; (2 1/2 to 3 pounds)
  • Oil ; for deep frying
  • Salt ; to taste

Directions
  1. Mix the flour, salt, pepper, oil and eggs together in a medium-large size bowl.
  2. Pour in the beer and whisk until thoroughly combined and lump-free.
  3. Peel the onions and slice them into about 3/8" thick rounds.
  4. Separate the rings.
  5. Dip the rings in the batter, shaking off any excess, and fry in batches in hot oil (375°) until golden brown, about 2-3 minutes.
  6. Turn and continue frying for another 1-2 minutes, until both sides are golden brown.
  7. Remove and drain on paper towels. Salt to taste.
