SPAM CANTINA APPETIZERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Clarke Estate in Plano, Texas in 1982.

Ingredients
  • 1 can Spam luncheon meat cubed
  • 1/2 cup chopped green onion
  • 1 tomato chopped
  • 1/2 cup chopped celery
  • 1 avocado peeled and chopped
  • 1/2 cup hot sauce
  • 3 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon peanut oil
  • 1 teaspoon garlic salt
  • 12 flour tortillas

Directions
  1. Sauté Spam until lightly browned then combine green onion, Spam, tomato, celery and avocado.
  2. Stir together hot sauce, parsley, juice, oil and garlic salt then toss dressing with Spam mixture.
  3. Serve with tortillas.
