SWISS STEAK DATED 1954 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Vega Estate in Longview, Texas in 1990.

Ingredients
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 pounds round steak cut in serving size pieces
  • 28 ounce can diced tomatoes
  • 1 large onion sliced
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cans peas drained

Directions
  1. Make a mixture of flour, salt, pepper and garlic then dip pieces of round steak in flour mixture.
  2. Pound floured steak pieces with a meat mallet then brown round steak in oil.
  3. Add sliced onion and sauté' then put steak back in skillet along with onion.
  4. Add chopped tomatoes with liquid then season with pepper and garlic powder.
  5. Cover and simmer for 1 1/2 hours and when done add drained peas.
