Potatoes Portofino

- 4 medium potatoes shopping list
- 6 ounce jar marinated artichoke hearts drained shopping list
- 1/2 cup cooked crumbled bacon shopping list
- 1/2 cup finely chopped parsley shopping list
- 1 can pitted ripe olives drained shopping list
- 6 ounces herbed cheese shopping list
- 1/3 cup olive oil shopping list
- 2 tablespoons white wine vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- In a covered saucepan cook potatoes in boiling water for 25 minutes then drain and cool.
- Slice potatoes into 1/2" thick slices.
- In a large bowl combine potatoes, artichoke hearts, bacon, parsley and olives.
- Mix together olive oil, vinegar, salt and pepper and add to the potato mixture then toss to coat.
- Arrange on a serving plate around cheese.
