Potatoes Portofino Recipe
These are incredible. Such a great potato dish with so many elegant flavors going on.

Ingredients
  • 4 medium potatoes
  • 6 ounce jar marinated artichoke hearts drained
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup finely chopped parsley
  • 1 can pitted ripe olives drained
  • 6 ounces herbed cheese
  • 1/3 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. In a covered saucepan cook potatoes in boiling water for 25 minutes then drain and cool.
  2. Slice potatoes into 1/2" thick slices.
  3. In a large bowl combine potatoes, artichoke hearts, bacon, parsley and olives.
  4. Mix together olive oil, vinegar, salt and pepper and add to the potato mixture then toss to coat.
  5. Arrange on a serving plate around cheese.

This sounds lovely as a side dish -- do you serve it cold, at room temperature, or hot? However it's served, sounds good to me!
