Ingredients

4 medium potatoes

6 ounce jar marinated artichoke hearts drained

1/2 cup cooked crumbled bacon

1/2 cup finely chopped parsley

1 can pitted ripe olives drained

6 ounces herbed cheese

1/3 cup olive oil

2 tablespoons white wine vinegar

1/2 teaspoon salt

1 teaspoon freshly ground black pepper

Directions

In a covered saucepan cook potatoes in boiling water for 25 minutes then drain and cool.

Slice potatoes into 1/2" thick slices.

In a large bowl combine potatoes, artichoke hearts, bacon, parsley and olives.

Mix together olive oil, vinegar, salt and pepper and add to the potato mixture then toss to coat.

Arrange on a serving plate around cheese.
