How to make it

  • In a covered saucepan cook potatoes in boiling water for 25 minutes then drain and cool.
  • Slice potatoes into 1/2" thick slices.
  • In a large bowl combine potatoes, artichoke hearts, bacon, parsley and olives.
  • Mix together olive oil, vinegar, salt and pepper and add to the potato mixture then toss to coat.
  • Arrange on a serving plate around cheese.

    This sounds lovely as a side dish -- do you serve it cold, at room temperature, or hot? However it's served, sounds good to me!
