Fast Mustard Lamb Chops

- 8 baby loin lamb chops trimmed of fat and edges scored shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 5 tablespoons grainy mustard shopping list
- fresh flat-leaf parsley sprigs shopping list
How to make it
- Preheat oven to 500.
- Lightly oil a shallow roasting pan.
- Rub both sides of each chop with pepper and place in the prepared roasting pan.
- Slather about 1 teaspoon mustard on one side of each chop and bring to room temperature.
- Roast mustard side up until chops are browned on top.
- Turn over and slather about 1 teaspoon mustard on the other side.
- Continue to roast for 5 minutes.
- Divide chops among warmed individual plates placing 2 chops on each plate.
- Garnish with parsley sprigs and serve immediately.
