Ingredients
  • 8 baby loin lamb chops trimmed of fat and edges scored
  • 1 teaspoon freshly ground black pepper
  • 5 tablespoons grainy mustard
  • Fresh flat-leaf parsley sprigs

Directions
  1. Preheat oven to 500.
  2. Lightly oil a shallow roasting pan.
  3. Rub both sides of each chop with pepper and place in the prepared roasting pan.
  4. Slather about 1 teaspoon mustard on one side of each chop and bring to room temperature.
  5. Roast mustard side up until chops are browned on top.
  6. Turn over and slather about 1 teaspoon mustard on the other side.
  7. Continue to roast for 5 minutes.
  8. Divide chops among warmed individual plates placing 2 chops on each plate.
  9. Garnish with parsley sprigs and serve immediately.
