Quick Summer Veggie Saute Recipe
Made with fresh veggies, this Relish is a bright sparkly combination of summer's flavors! Fresh Anaheim chiles would be nice.(I'm used to the canned Ortegas, what can I say?)!! Enjoy

Ingredients
  • 2 medium zucchini , 1/2 inch slices
  • 2 ears of corn for corn kernels, cut from fresh husks
  • 1 1/4 pounds fresh tomatoes, chopped
  • 3 oz. canned green chiles, chopped (Ortega)
  • 1 1/2 Table. cilantro or parsley, chopped
  • a pinch of oregano and salt to taste
  • a bit of oil for saute-ing

Directions
  1. Saute zucchini and corn about 2 minutes, medium-high heat. Add the tomatoes and green chile. and the oregano and salt. Cover skillet and simmer until zuke is tender, 5 to 6 minutes.
