Fusilli with Asparagus and Bacon

- 6 slices bacon, cut into 1/2 inch pieces shopping list
- 2 tbls. olive oil shopping list
- 1 onion, finely chopped shopping list
- 1 1/2 lb. asparagus, trimmed and cut 1/2 inch diagonally shopping list
- salt and pepper to taste shopping list
- 1 lb. fusilli shopping list
- 1/2 cup Parmesan, finely grated shopping list
- Additional Parmesan to garnish shopping list
How to make it
- In skillet, cook bacon until browned and crisp
- With slotted spoon, remove bacon to paper towel to drain
- Pour off all but 2 tbls. of bacon fat from skillet
- Add olive oil and onion to skillet and cook until tender
- Add asparagus, salt and pepper and saute until tender crisp, about 5 minutes
- Cook fusilli according to package directions
- Reserve 1 cup of pasta water and drain
- Return pasta to pot and add asparagus mixture, 1/2 cup pasta water, and cheese
- Add 1/2 cup water to skillet and bring to boil, stirring and scraping to get up all brown bits
- Add to pasta and combine over low heat
- Once in serving bowl, sprinkle bacon and additional cheese over top
