How to make it

  • In skillet, cook bacon until browned and crisp
  • With slotted spoon, remove bacon to paper towel to drain
  • Pour off all but 2 tbls. of bacon fat from skillet
  • Add olive oil and onion to skillet and cook until tender
  • Add asparagus, salt and pepper and saute until tender crisp, about 5 minutes
  • Cook fusilli according to package directions
  • Reserve 1 cup of pasta water and drain
  • Return pasta to pot and add asparagus mixture, 1/2 cup pasta water, and cheese
  • Add 1/2 cup water to skillet and bring to boil, stirring and scraping to get up all brown bits
  • Add to pasta and combine over low heat
  • Once in serving bowl, sprinkle bacon and additional cheese over top
