Pikelets

- 2 cups self-raising flour shopping list
- 4 tbs sugar shopping list
- 2 eggs shopping list
- 1 ½ cups milk shopping list
How to make it
- Combine flour and sugar in a bowl. Gradually whisk in egg and milk to make a thick, smooth batter.
- Let batter rest for about 30 minutes.
- Drop dessertspoons of mixture into a greased heavy-base frying pan over medium heat. Cook until bubbles begin to appear on the surface of the pikelet. Turn and brown other side.
- Serve with jam and whipped cream.
