How to make it

  • Combine flour and sugar in a bowl. Gradually whisk in egg and milk to make a thick, smooth batter.
  • Let batter rest for about 30 minutes.
  • Drop dessertspoons of mixture into a greased heavy-base frying pan over medium heat. Cook until bubbles begin to appear on the surface of the pikelet. Turn and brown other side.
  • Serve with jam and whipped cream.
