How to make it

  • Spray Pam cooking spray on a jelly roll pan, then line pan with wax paper or parchment paper
  • Spray the paper with Pam also (be generous with the spray)
  • Mix all Pumpkin roll ingredients and spread evenly onto pan
  • Sprinkle pecans on the top of the batter
  • Bake for 15 minutes at 375 degrees
  • After the roll has baked, sprinkle with powdered sugar on top
  • Place on a sugared cotton towel and remove from jelly roll pan
  • Sugar other side
  • Let dough cool on a wire rack for about 15 minutes, but not completely (You want it to be warm enough to roll without cracking the dough)
  • Combine filling ingredients
  • Mix until fluffy
  • Spread filling onto dough, roll gently and chill before serving.
  • *may freeze roll too
