My sister-in-law makes this dessert over the holidays.

Ingredients
  • Pumpkin Roll:
  • 3 eggs
  • 1 cup sugar
  • 2/3 can of pumpkin filling
  • ¾ cup flour
  • 1 tsp. baking soda
  • ½ tsp. cinnamon
  • 2 oz. of chopped pecans
  • Filling:
  • 8 oz. cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp. vanilla extract
  • 2 Tbsp. butter

Directions
  1. Spray Pam cooking spray on a jelly roll pan, then line pan with wax paper or parchment paper
  2. Spray the paper with Pam also (be generous with the spray)
  3. Mix all Pumpkin roll ingredients and spread evenly onto pan
  4. Sprinkle pecans on the top of the batter
  5. Bake for 15 minutes at 375 degrees
  6. After the roll has baked, sprinkle with powdered sugar on top
  7. Place on a sugared cotton towel and remove from jelly roll pan
  8. Sugar other side
  9. Let dough cool on a wire rack for about 15 minutes, but not completely (You want it to be warm enough to roll without cracking the dough)
  10. Combine filling ingredients
  11. Mix until fluffy
  12. Spread filling onto dough, roll gently and chill before serving.
  13. *may freeze roll too

I have made this one several times and it is ALWAYS a hit. I have several requests for them at holiday time.
