Pumpkin Roll

- pumpkin Roll: shopping list
- 3 eggs shopping list
- 1 cup sugar shopping list
- 2/3 can of pumpkin filling shopping list
- ¾ cup flour shopping list
- 1 tsp. baking soda shopping list
- ½ tsp. cinnamon shopping list
- 2 oz. of chopped pecans shopping list
- Filling: shopping list
- 8 oz. cream cheese (softened) shopping list
- 1 cup powdered sugar shopping list
- 1 tsp. vanilla extract shopping list
- 2 Tbsp. butter shopping list
How to make it
- Spray Pam cooking spray on a jelly roll pan, then line pan with wax paper or parchment paper
- Spray the paper with Pam also (be generous with the spray)
- Mix all Pumpkin roll ingredients and spread evenly onto pan
- Sprinkle pecans on the top of the batter
- Bake for 15 minutes at 375 degrees
- After the roll has baked, sprinkle with powdered sugar on top
- Place on a sugared cotton towel and remove from jelly roll pan
- Sugar other side
- Let dough cool on a wire rack for about 15 minutes, but not completely (You want it to be warm enough to roll without cracking the dough)
- Combine filling ingredients
- Mix until fluffy
- Spread filling onto dough, roll gently and chill before serving.
- *may freeze roll too
