Summer Ham Amp Potato Soup Recipe
This is a quick and easy way to use up that left over ham!! Also great summer dish.

Ingredients
  • water
  • 1 ham hock
  • left over ham cubed
  • 4 large potatoes cubed or 8 red potatoes quartered
  • 1 can tomatoes
  • 1 tub sour cream
  • 1 quarter onion chopped
  • 1 bag frozen brussle sprouts
  • 2 tbs miced garlic
  • salt & pepper to taste
  • 1 tsp ground cumin
  • 1 tsp rosemary
  • 1 tsp peprika

Directions
  1. mix all ingredients besides water and brussle sprouts in crockpot
  2. add enough water to cover ham hock
  3. let cook on low for 4 hrs on high
  4. 45 minutes befor serving remove ham hock and add brussle sprouts
  5. you could cook this on the stove if you wanted in about fourty five minutes

Your soup sounds delish but I need a little explanation - how much sour cream - tubs come from 1 cup to 4 cups?? Other than that - welcome to Group Recipes - it is a fun place and lots of wonderful cooks and recipes. I see we are both from Washington - makes us almost neighbors!
