Lean Bean Thing Recipe
Easy, hot bean dish to eat with corn chips or wrap up in warm tortillas. No measurements, just eyeball and to taste and I'm not sure how many it serves - makes a lot. Perfect on-the-go food.

Ingredients
  • Olive Oil
  • Brown rice (cooked)
  • Red bell pepper
  • Garlic clove
  • Cilantro
  • Red or black beans (canned or cooked)
  • Sundried tomatoes
  • Tabasco sauce
  • Chicken broth
  • Shredded mozzarella or pepper jack cheese

Directions
  1. Sauté minced garlic, chopped bell pepper in a little olive oil.
  2. Add sundried tomatoes and broth (enough to soak everything and rehydrate the tomatoes).
  3. When you’ve cooked off most of the broth, add cooked beans and cooked brown rice.
  4. Stir together and add a dash of Tabasco.
  5. Take off heat and add chopped fresh cilantro.
  6. Sprinkle with cheese.
