How to make it

  • Sauté minced garlic, chopped bell pepper in a little olive oil.
  • Add sundried tomatoes and broth (enough to soak everything and rehydrate the tomatoes).
  • When you’ve cooked off most of the broth, add cooked beans and cooked brown rice.
  • Stir together and add a dash of Tabasco.
  • Take off heat and add chopped fresh cilantro.
  • Sprinkle with cheese.
