How to make it

  • Combine cheeses then set aside then combine Mexican spice and crushed red pepper.
  • Rub a frying pan lightly with oil then heat one tortilla turning after 1 minute.
  • Cover half of the tortilla with 1/4 cheese mix, 1/4 seasoning, 1/4 jalapeno and 1/4 onions.
  • Fold in half then cook over low heat until tortilla starts to become crisp.
  • Turn and cook other side then remove from pan and cut into 4 wedges.
  • Serve with salsa and sour cream.
