Proscuitto and Eggplant Sandwich

- 2 slices of your choice of bread shopping list
- 1/3 cup cabbage - shredded shopping list
- 1/3 tomato - sliced shopping list
- 40g grilled eggplant shopping list
- 2 pieces of proscuitto shopping list
- 1 tablespoon ricotta cheese shopping list
- small lemon wedge shopping list
- 1 teaspoon parsley - fresh & finely chopped or dried shopping list
- salt and pepper to preference shopping list
How to make it
- Spread ricotta cheese on both slices of bread.
- Layer your sandwich, starting with cabbage and tomato.
- Place your pieces of proscuitto on top and add a squeeze of lemon.
- Sprinkle with parsley and salt and pepper to preference.
- Add your mayonnaise and top with grilled eggplant.
- Cover the sandwich with the other piece of bread and placed under a sandwich grill or in the oven for bread to toast for approximately 3 minutes or to preference.
