Proscuitto And Eggplant Sandwich Recipe
This is a light sandwich that adds a hit to light vegetables. Very versatile and loved!

Ingredients
  • 2 slices of your choice of bread
  • 1/3 cup cabbage - shredded
  • 1/3 tomato - sliced
  • 40g grilled eggplant
  • 2 pieces of proscuitto
  • 1 tablespoon ricotta cheese
  • small lemon wedge
  • 1 teaspoon parsley - fresh & finely chopped or dried
  • salt and pepper to preference

Directions
  1. Spread ricotta cheese on both slices of bread.
  2. Layer your sandwich, starting with cabbage and tomato.
  3. Place your pieces of proscuitto on top and add a squeeze of lemon.
  4. Sprinkle with parsley and salt and pepper to preference.
  5. Add your mayonnaise and top with grilled eggplant.
  6. Cover the sandwich with the other piece of bread and placed under a sandwich grill or in the oven for bread to toast for approximately 3 minutes or to preference.
