Banana date corn cakes

- 1 cup yellow cornmeal shopping list
- 1 cup semolina shopping list
- 1/3 cup dates, chopped (or more if you like) shopping list
- 1 to 4 Tbsp brown sugar (depending on taste) shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 2 very ripe medium bananas, mashed shopping list
- 2 eggs shopping list
- 1/4 cup oil shopping list
- 1 tsp vanilla shopping list
- 1 cup buttermilk (add a Tbsp of vinegar to normal milk if you havent got it) shopping list
How to make it
- Combine all the dry ingredients (not banana) in a large bowl.
- In a small bowl, combine the remaining ingredients.
- Add wet ingredients to the dry's. Don't over-mix.
- Preheat oven to 200C (400F)
- Spoon into muffin trays or pattypans.
- Sprinkle with coconut if you like.
- Bake for 15-18 minutes, until slightly browned and a skewer comes out clean.
- **these are also good warm with cream or custard. You can substitute raisins or sultanas or figs for the dates.**
