How to make it

  • Combine all the dry ingredients (not banana) in a large bowl.
  • In a small bowl, combine the remaining ingredients.
  • Add wet ingredients to the dry's. Don't over-mix.
  • Preheat oven to 200C (400F)
  • Spoon into muffin trays or pattypans.
  • Sprinkle with coconut if you like.
  • Bake for 15-18 minutes, until slightly browned and a skewer comes out clean.
  • **these are also good warm with cream or custard. You can substitute raisins or sultanas or figs for the dates.**
