Whole Baked Salmon With Spices And Prunes Dated 1967 Recipe
WHOLE BAKED SALMON WITH SPICES AND PRUNES DATED 1967 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Colvin Estate in Little Rock, Arkansas in 1989. I tried this and it is good.

Ingredients
  • 3 pound fresh salmon gutted and cleaned
  • 6 tablespoons softened unsalted butter
  • 2 teaspoons ground mace
  • 12 whole cloves
  • 1-teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup whole cooked prunes
  • 3 tablespoons currants
  • 2 lemons wedged
  • Fresh dill leaves

Directions
  1. Lay salmon on a large greased sheet of foil set on a baking sheet.
  2. Mix butter with mace and salt then spread on inside cavity and over the skin.
  3. Sprinkle with cloves then wrap foil up loosely but sealing well then bake 45 minutes at 350.
  4. Allow standing 5 minutes before dishing into larger platter with fish juices poured over top.
  5. Garnish with prunes, currants, lemon wedges and fresh dill.
