THAI YELLOW CURRY WITH CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Grimes Estate in Bryan, Texas in 1988.

Ingredients
  • 1 tablespoon red curry paste
  • 4 tablespoons vegetable oil
  • 1 cup thin slices chicken breast
  • 2 teaspoons curry powder
  • 2 cups coconut milk
  • 2 cups water
  • 1 cup cubed potatoes cut in 1” squares
  • 1/2 cup cubed white onion cut in 1” squares
  • 1/2 cup cubed tomato cut in 1” squares (save liquid)
  • 4 teaspoons fish sauce
  • 1 teaspoon granulated sugar
  • 1/4 cup 1” cut green onion
  • Jasmine rice

Directions
  1. Set small soup pot over medium heat and when hot add red curry paste and oil.
  2. Mix well stirring regularly 1 minute then add chicken and curry powder.
  3. Stir well then add coconut milk and continue stirring.
  4. Add water, potato and white onion and bring to boil.
  5. Reduce heat to medium and cook until potato is tender.
  6. Add tomato with any liquid, fish sauce and sugar and cook over low heat 5 to 10 minutes.
  7. Garnish with green onion, then immediately remove from heat and serve over rice.
